Oven Baked Eggplant Cubes

Ingredients

1 eggplant

2 – 3 Tbsp. avocado oil

1/2 tsp Tajin or ½ tsp salt

Directions:

  1. Preheat oven to 425 degrees Fahrenheit
  2. Line baking tray with parchment paper
  3. Cut eggplant cubes about ¼ inch slices and about ½ inch cubes. Smaller pieces will turn out mushy
  4. Place eggplant on baking tray and sprinkle about ½ tsp. Tajin. If you do not have Tajin, you can substitute with regular salt.
  5. Add about 2 – 3 tbsp avocado or any cooking oil and mix with eggplant and Tajin.
  6. Bake in oven for about 20 minutes
  7. After 20 minutes, flip eggplant cubes to the other side to your preferred browning
  8. Bake for another 5 – 10 minutes until desired tenderness.
  9. Remove from oven and let cool for about 10 minutes

        Great to snack as is, or enjoy with  a side of protein like tofu or meat.  And there you have it! Simple, healthy veggie dish!
