Light and Refreshing Salad

Ingredients: 

Baby spring mix

Carrots

Artichoke hearts (canned)

Avocado

Olive oil

Sesame oil

Lemon or lime

Salt

Balsamic vinegar

Pumpkin seeds

Directions:

  1. Rinse and drain water from baby spring mix
  2. Cut carrots into bite size pieces or strips about an inch long
  3. Mix baby spring mix, carrots, artichoke hearts, avocado
  4. In a separate bowl for the dressing, mix 3 tbsp olive oil, 1 tbsp sesame oil, juice half a lemon or lime, 2 tbsp balsamic vinegar, and a pinch of salt
  5. Combine dressing with salad
  6. Sprinkle pumpkin seeds

This light and refreshing salad is a great side dish or also a main dish if you add some proteins like eggs or meat. Enjoy!
