Light and Refreshing Salad
Ingredients:
Baby spring mix
Carrots
Artichoke hearts (canned)
Avocado
Olive oil
Sesame oil
Lemon or lime
Salt
Balsamic vinegar
Pumpkin seeds

Directions:
- Rinse and drain water from baby spring mix
- Cut carrots into bite size pieces or strips about an inch long
- Mix baby spring mix, carrots, artichoke hearts, avocado
- In a separate bowl for the dressing, mix 3 tbsp olive oil, 1 tbsp sesame oil, juice half a lemon or lime, 2 tbsp balsamic vinegar, and a pinch of salt
- Combine dressing with salad
- Sprinkle pumpkin seeds

This light and refreshing salad is a great side dish or also a main dish if you add some proteins like eggs or meat. Enjoy!
