Fruit Cake

Ingredients:

1 ½ cup of all purpose flour

¼ cup brown sugar

½ tsp salt

½ tsp baking powder

¼ tsp baking soda

1 tsp cinnamon

½ cup plain yogurt

½ cup olive oil

2 eggs

1 tsp. vanilla extract

1 cup grapes (cut in halves)

½ cup frozen strawberries

½ cup frozen blueberries

½ cup walnuts

½ cup pecans

½ sprouted pumpkin seeds

Directions:

  1. Preheated oven to 350 degrees Fahrenheit and grease baking trays
  2. Mix flour, sugar, salt, baking powder, baking soda, and cinnamon in a bowl
  3. Combine yogurt, olive oil, vanilla extract, and eggs in  a separate bowl
  4. Wash and cut grapes in halves
  5. Combine the yogurt mixture with the dry ingredients
  6. Add in the grapes, frozen strawberries, and frozen blueberries. Mix well
  7. Add in walnuts and pecans and pumpkin seeds
  8. Bake in oven for about 50 – 55 minutes or until a toothpick inserts in the middle and comes out clean

    This healthy fruit cake uses yogurt and flour as the base and makes a well balanced snack. Enjoy!
