Oven-Roasted Wild Cod

Ingredients:

1 lb wild cod

½ tsp salt

½ tsp pepper

½ tsp oregano

½ tsp parsley

½ tsp brown sugar

2 tbsp avocado oil

1 tsp lemon juice

Directions:

  1. Combine wild cod, salt, pepper, oregano, parsley, brown sugar, and olive oil
  2. Let marinate in the refrigerator for at least 2 hours or overnight
  3. Preheat oven to 250 degrees Fahrenheit and grease baking tray
  4. When done preheating, place in oven for about 30 – 45 minutes, or until internal temperature reaches 145 degrees Fahrenheit
  5. Remove from oven and let cool for at least 10 minutes
  6. Squeeze about a tsp of lemon juice

     Great to pair with vegetable or place atop on a bowl of noodles! Enjoy!
